Rustic Bread and Cheese Salad Recipe

Combining the hearty, simple fare of peasants and village folk, this salad showcases bread and cheese as two of its main ingredients, and can make for an extremely filling meal. Unlike usual, traditional salads, which are frequently nothing more than a pile of leaves, this recipe is something entirely different, and far more substantial. Easy to make, the salad requires little effort, and is bound to prove a tasty accompaniment to your meals.

As far as nutrition is concerned, this salad is packed with carbohydrates and fibers. In addition to the bread and cheese, it is loaded with vegetables like cucumbers, tomatoes, carrots, bell peppers, and celery, along with herbs like mint and basil for flavouring.

Ingredients:

– 1 medium-sized loaf of French bread, cut into 1-inch square cubes
– 1/4 cup red onion, diced
– 4 red plum tomatoes, sliced
– 4 tablespoons olive oil
– 4 basil leaves, torn into small pieces
– 4 mint leaves, torn into small pieces
– 2 tablespoons vinegar
– 1 cup cheddar cheese, shredded
– 1/2 cucumber, seeded and sliced
– 1 carrot, diced
– 1/2 red bell pepper, finely diced
– 1 celery stalk, diced
– Salt (to taste)
– Freshly ground black pepper (to taste)

    Start by preheating the oven, as you will need to use it to prepare the bread for the salad. The temperature should be around 350 F.

    Then, toss the bread cubes with 3 tablespoons of the olive oil, along with the salt and pepper. Spread them all out evenly in one layer on a baking sheet – do not crowd them together, or stack too many on each other, as this will prevent them from browning evenly.

    Slide the pan into your preheated oven, and bake until the bread cubes develop a golden brown colour and a crunchy texture. Take the tray out a couple of times as the bread cubes bake, and give it a good shake, to make sure they don’t stick to the bottom of the tray. Once they are done, remove the pan from the oven and set it aside to cool.

    Combine all the ingredients except the bread cubes, cheese, vinegar and remaining olive oil in a large bowl. Mix well, so that all the flavors blend in with each other. Season with salt and pepper to taste, and add in the bread cubes and shredded cheese. As a finishing touch, drizzle on the remaining olive oil and vinegar.
