Seafood Salad with Watercress Dressing Recipe

Bringing to you a delight that is going to make you fall in love with food all over again. This heavenly combination of shrimps with watercress is going to make you exceed your diet plan and go for a second serving because it is so spoon-licking good. As a host you might even have to replenish the dish now and then due to the eager helpings by guests.

Ingredients:

– 10 shrimps (cleaned up)
– 2 tablespoon garlic (chopped into paste form)
– 2 tablespoon sesame oil
– 7 oz Squid, either canned or fresh, cut into cubes
– 5 oz mussels
– 2.6 tablespoon soy sauce
– 1 red onion
– 2 tomatoes, thinly sliced
– 2 bunches watercress, cleaned and stems cut off
– 12 bunch chives (thinky cut into sticks form)
– 2 ozs chervil
– 3 tablespoon vinegar
– salt and pepper according to taste (freshly ground pepper tastes best)
– Feta cheese for garnish (as desired)

Instructions

    In a pan, put the oil and then saute the garlic and shrimp lightly for about a minute. Now add the squid and mussels. Wait for the mussels to open. Do all this on low heat to avoid overcooking the shrimp which will deteriorate in its taste and nutrition value. Now, add salt and pepper according to taste.

    Use a spoon to take out the sea food and place in a bowl.  Keep heating the remaining solution until it becomes thick in a paste form. Now add one bunch watercress followed by soy sauce. Add the shrimp back to this solution, stir well.

    In a mixing bowl, combine the second bunch of watercress with sliced red onion, tomatoes, bean sprouts, chervil, chives, champagne vinegar and salt and pepper to taste.

    Arrange  the watercress mixture on the platter and top them up with the sea food you prepared. Put some on the sides too. Garnish by sprinkling some feta cheese.
