Ingredients:
– 2 250g packets soba noodles
– 4 tablespoons tamari or dark soy sauce
– 4 tablespoons sesame oil
– 1 tablespoon rice vinegar
– 1 tablespoon caster sugar
– 1/2 teaspoon chilli oil
– 1 red capsicum, julienned
– 2 carrots, julienned
– 1 bunch spring onions, sliced

Take a large stockpot and boil salted water to cook the noodles until they become firm, but not stiff. When the noodles are cooked, then wash them with cold water and then drain them well.

Then grab a small bowl and blend together 3 tablespoons of sesame oil, chilli oil, sugar vinegar and 3 tablespoons tamari to form a mixture.

Now with the help of tongs, toss the noodles along with tamari dressing until it gets coated well. Marinate this mixture for about 2 hours or up to 24 hours in a covered bowl by tossing it occasionally.

After marinating the noodles, bring them to room temperature then blend the remaining 1 tablespoon of sesame oil and tamari in order to pour it on the noodles. You will stir 2/3 of spring onions along with 1/2 carrot and red capsicum three hours before serving this concoction of noodles.
