Special Potato Salad Recipe

Potato – this vegetable may look plain on the outside but all of us know that it is the source of many of our food pleasures with its taste. Apart from being a good source of starch (carbohydrates), the Special Potato Salad tastes amazing in all forms, boiled, baked or fried. Couple it up with anything and it will taste good.

People simple love eating plain baked potatoes with salt and pepper and a sprinkle of cheddar. That is the fun of this ingredient. Ingredients:

-5 lbs red potatoes, with skins on
-2 cups mayonnaise (more or less depending on how you like it, Do NOT use fat free or low fat)
-1 large onion, finely diced
-2 stalks celery, finely diced or 1 teaspoon celery seed
-3 carrots, finely diced
-1 green pepper, finely diced
-6 hard-boiled eggs, finely chopped
-3 tablespoons fresh finely chopped chives
-20 green olives, finely chopped
-1/4 cup yellow mustard
-2 tablespoons cider vinegar
-1 tablespoon sugar
-1/2 teaspoon salt
-1 teaspoon black pepper (freshly ground pepper will be best)

    Peel the potatoes and boil them in the saucepan. Boil for twenty minutes or when you are sure that they have gone tender. Use a fork to judge the softness. They should not be mushy and be firm to the taste.

    After draining the hot water, slice up these potatoes or cube them. If you allow them to cool, they will be diced easily.

    Mix all other ingredients mentioned above in a separate mixing bowl and add them to the potatoes. Mix well together. Refrigerate for two hours before serving so that the flavors blend in with each other well.
