Ingredients:
– 1 orange, zest finely grated and juiced to yield ⅓ cup (about 80 ml) juice
– 2 ¼ cups (about 500 g) cottage cheese
– 2 red apples
– 1 ¼ cups (about 200 g) blueberries
– 16 dried apricots – finely chopped
– 2 celery stalks – finely chopped
– 150 g mixed salad leaves
– 2 kiwifruit -peeled and sliced
– 2 nectarines – stoned and sliced
– 1 tablespoon sesame seeds – toasted (optional)

Take a bowl and mix 2 ¼ cups of cottage cheese and an orange zest.

Seize two fresh red apples, wash them and cut into half. Remove the seeds and dice them nicely. Place the apple slices in another bowl and top them with blueberries, finely chopped dried apricots and finely chopped celery stalks. Stir them gently in order mix properly.

Pick four medium serving plates and divide the fresh mixed salad leaves among them.

Top each mound of mixed salad leave on the plate with equivalent portions of peeled and sliced kiwifruit along with stoned and sliced nectarines.

Now, sprinkle the four salads with 1 tablespoon orange juice each.

Spoon out the previously prepared cottage cheese and fruit mixture onto the four plates.
