Tomato, Cucumber and Red Onion Salad with Mint Recipe

A summer salad made with tomatoes, onions and cucumbers that presents a wide array of fresh colors and refreshes the taste buds. It looks absolutely gorgeous in presentation and makes a great couple with steaks and other meat main dishes. As a side dish it can earn a permanent place on the menu. It is extremely easy to put together with ingredients that are easily available. The mint adds its own unique taste and sweet fragrance to the salad. Every ingredient brings its own color and taste and when combined, they form an exquisite appealing product.

The cucumbers are let to stand in a dressing of vinegar, sugar and olive oil which makes them quite flavorsome. The recipe here is tailored to a serving size of six which can always be altered according to your needs. Ingredients:

– 2 large cucumbers – halved lengthwise, seeded and sliced
– 1/3 cup red wine vinegar
– 1 tablespoon white sugar
– 1 teaspoon salt
– 3 large tomatoes, seeded and coarsely chopped
– 2/3 cup coarsely chopped red onion
– 1/2 cup chopped fresh mint leaves
– 3 tablespoons olive oil
– salt and freshly ground pepper to taste

    Take a large mixing bowl. Combine the cucumber, vinegar, salt and sugar. Cover it with cling film and leave at room temperature for about an hour. Stir occasionally so that the flavors blend together well to give an even taste.

    After an hour, add tomatoes, onion, mint and oil to the cucumber mixture and toss together well. Season with salt and freshly ground pepper. Do a taste check. Garnish with a mint leaf and serve right away.
