Veggie Burger Recipe with Tahini Sauce

Ingredients:
Carrots, grated: 1 cup
Zucchini, grated: 1 cup
Mushrooms, finely chopped: 2 cups of
Grated onions: ½ a cup
Potato, grated: 1 medium
Bread crumbs: 1 cup
Cloves of garlic, minced: 3
Fresh basil leaves, chopped: 2 tablespoons
Fresh cilantro, chopped: 2 tablespoons
Toasted sesame leaves: 3 tablespoons
Curcuma: 1 tablespoon
Egg: 1
Extra virgin olive oil
Salt and pepper: To taste

    Take a non-stick skillet and place it over medium heat. Pour olive oil in it and allow it to heat. Now fry onions and garlic in the oil until tender. Make sure that they are not completely cooked. Mix carrots, zucchini, potatoes, toasted sesame seeds and mushrooms and stir them well. Cook for around 15 minutes, until you find all the vegetables start turning tender. Make sure you do not make them mushy.

    Now add basil, cilantro and curcuma in the mixture and sprinkle around ½ tablespoon olive oil over the mixture. Add salt and white pepper, according to your own taste level, and mix well. Remove the skillet from the heat.

    Transfer the whole mixture to a large bowl and add an egg in it. Gradually add and mix ½ cup bread crumbs. If necessary, add more and blend them well together.

    Put some on your hands and start making patties using the mixture you just created. If you find the mixture too loose and unable to create patties, then you can add more bread crumbs, to make a bit hard.

    Press the patties with your hands in order to make the ingredients to hold together and avoid from falling apart.

    Put some olive oil in the frying pan and place it over medium heat. Place your veggie burgers in the pan and fry for around 4 minutes from each side, until you find the outer surface turning golden brown and crispy. Transfer them to a plate.

    Now place the tahini sauce in a small bowl and place the bowl between the burgers and serve.
