Warm Broad Bean and Feta Salad Recipe
The salad is a fantastic combination of broad beans with feta cheese and tomatoes. It is so wholesome and fulfilling that it can easily qualify as a light lunch in itself. Ingredients:
-2 lbs broad beans, shelled (or 12 oz shelled frozen beans)
-4 Tablespoon olive oil
-6 oz plum tomatoes, quartered or halved to bite-size pieces
– 4 oz firm feta cheese, cut into chunks
-3 Tablespoon fresh dill
-12 black olives
-salt and ground black pepper
-chopped fresh dill to garnish

In a saucepan or saucer, boil the beans in salted water till you are sure that they gave gone tender. Drain the water and set the beans aside in a small bowl for later use.

In a pan, heat the olive oil and add the tomatoes and garlic to it. Fry them until the tomatoes change to show color. To this add the feta cheese and keep frying for another minute. Also toss together the ingredients for the flavors to blend well.

Put the beans in a large salad bowl and mix with dill, olive, salt and pepper. To this add the pan mixture and combine well. Garnish with chopped dill and serve immediately.
