Warm Potato Salad Recipe

Preparation time: 45 minutes ( 20 fro preparation, 25 for cooking)
Utensils needed: Boiling pan, sald bowl, spoon

Ingredients:

10 large red  potatoes
– 2 slices cooked bacon, crumbled
– 1/2 cup mayonnaise
– 1/4 cup mustard
– 2 green onions, chopped
– 1 red onion, chopped
– 1 tablespoon Turmeric (ground)
– 2 tablespoon vinegar
– salt and pepper to taste ( freshly ground pepper will be best)

Instructions

    Boil the potatoes in the pan for 10-12 minutes or till they are tender. Add salt to the boiling water. Use a knife/fork to prick and gauge their softness. Now, put them aside to cool. Cut them up into cubes or half/quarters. Remember, you have to let the potato skins on. Do not peel them. Also do not let the potatoes get too mushy while boiling. Boil just enough to make them tender.

    In a bowl, pour the the mustard, mayonnaise, vinegar, turmeric, salt and pepper. Whisk well to get an even dressing.

    To the potatoes, add the bacon and chopped onions. Top it up with the dressing. Toss well to mix all the ingredients. Chopped fresh Parsley leaves will certainly add more color to the dish.

    You can refrigerate and store it up to a day. For a fresh look, add the green onions later.
