Watercress Kiwi Mushroom and Tomato Salad Recipe

Watercress, Kiwi, Mushroom and Tomato Salad is flavor-packed dish, which is very easy to make as it does not involve any cooking. The fresh Watercress, crispy kiwi, nutritious mushrooms, and the juicy tomatoes are nicely put together in order to make a vivacious first course or as complement to meat meals. In addition to that, the filling vinegar-olive dressing adds to overall taste of the salad.

You can add an extra color to this vibrant salad by garnishing it with some fresh lavender flowers or few pale purple chives. Although, you can add them into the ingredients of the salad as well.

Ingredients:

– 125 g (about 4½ oz) watercress sprigs
– 2 kiwi fruits – peeled and thinly sliced
– 125 g (about 4½ oz) button or chestnut mushrooms- thinly sliced
– 250 g (about 9 oz) tomatoes – finely sliced

Ingredients for Dressing:

– 1 teaspoon red wine vinegar
– Salt and black pepper
– 4 teaspoons olive oil

    First of all rinse and drain the watercress. Now, remove their stems and arrange a bed of watercress sprigs in a large serving platter or a salad bowl.

    Now, peel the two kiwi fruits and cut them into fine slices. Assemble the kiwi slices on the top of the watercress.

    Scatter the thinly sliced mushrooms and tomato slices on top. Cover and refrigerate this mixture until you make a filling and smooth vinegar-olive dressing.

    Pour the red wine vinegar into a small mixing bowl and season with some fresh ground black pepper and salt. Whisk both of the ingredients together until smooth and the salt dissolves completely. Add in the olive oil and fluff up again until it mixes up with the mixture.

    Few seconds prior to dishing up, drizzle the dressing all over the salad mixture and mix up very gently, making sure not to disturb the arrangement of the ingredients of salad.
