Winter Quinoa and Kumquat Salad Recipe
Winter quinoa and kumquat salad is a unique combination of flavours, and is different from the usual, run-of-the-mill salads. A combination of all sorts of classic ingredients that are generally associated with winter, this off-beat salad offers you the perfect opportunity to showcase your culinary skills.
The salad combines a dressing made of kumquats, drizzled over boiled quinoa, pears, cucumbers and watercress. Utensils: Large pan, bowl, spoon
Ingredients:
– 1/4 kg quinoa
– 1/2 litre water
– 2 kumquats, pips removed and chopped
– A handful of fresh coriander, chopped
– 4 tablespoons olive oil
– 3 tablespoons lemon juice
– Salt (to taste)
– 1 peeled pear, chopped
– 1 peeled cucumber, chopped
– 100g watercress, chopped

Pour all the quinoa into a pan filled with water, place this on the stove over low heat, and bring it up to a boil. Allow the contents to cook, and take the pan off the heat only when the quinoa is tender, and cooked through – this should take approximately 10 minutes. When it is done, drain the water and set the quinoa aside to cool.

While the quinoa is cooling off, you can begin preparing the dressing. In a bowl, mix the kumquats, coriander, olive oil and lemon juice. Add salt as per your preferences, and have a quick taste check. Adjust the seasonings if you wish, and add more lemon juice if you want the dressing to be tangier.

Now, combine the quinoa, pears and cucumbers in a large salad bowl, and mix them all together. Pour all the dressing over it and toss well to make sure everything is evenly coated. Finally, add in the watercress, and mix it in – your winter quinoa and kumquat salad is now ready to serve.
